INGREDIENTI
Fish
- 🐟 2 fillets mackerel (160g)
- 🍅 4 cherry tomatoes
- 🧂 Pinch of salt and pepper
- Enough flour for coating
- 1 tbsp olive oil
- 🌿 Pinch of chopped parsley
Sauce
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
- 1.5 tbsp balsamic vinegar
PASSI
Quarter the cherry tomatoes.
Season the mackerel fillets with salt and pepper, then coat them lightly with flour.
Heat olive oil in a pan over medium heat. Place the mackerel skin-side down and cook for 4–5 minutes until golden. Flip and cook on low heat for 3–4 minutes until fully cooked. Remove and plate.
Wipe the pan clean with a paper towel. Add the sauce ingredients (sake, sugar, soy sauce, balsamic vinegar) and simmer on low heat until reduced by half. Add the cherry tomatoes and stir briefly.
Pour the balsamic sauce over the mackerel and garnish with chopped parsley.
