INGREDIENTI
Main Ingredients
- 🐟 200g yellowtail fillets
- 🥬 300g daikon radish
- 1 tbsp salt koji
- 1 piece ginger
Seasonings
- 2 tbsp sake
- 1 tbsp salt koji
- 1/3 tsp Japanese dashi powder
- 💧 100ml water
PASSI
Cut the daikon into 2cm thick half-moon slices and peel thickly. Julienne the ginger.
Pat the yellowtail fillets dry with paper towels and cut into thirds. Place them in a bag with salt koji, massage gently, and marinate in the refrigerator for at least 1 hour.
In a pot, add the daikon and enough water to cover. Bring to a boil, cover, and simmer on low heat for 7–8 minutes until tender. Drain and set aside.
Clean the pot and add the seasonings (sake, salt koji, dashi powder, water) along with the ginger. Heat over medium heat until boiling. Add the marinated yellowtail and daikon, cover with a drop lid, and simmer on low heat for 15–20 minutes.
