INGREDIENTI
Main Ingredients
- 🍄 1 king oyster mushroom (100g)
- 🧂 A pinch of salt and pepper
- 🧄 A pinch of grated garlic
- 1 tbsp olive oil
- Enough salad oil for frying
Pilaf Ingredients
- 🍚 2 cups washed rice
- 1 can scallops (55g)
- 🍄 1/2 king oyster mushroom (50g)
- 🧅 1/4 onion, minced
- 🥕 1/4 carrot, minced
- 🧂 1/2 tsp salt
- 1/2 tsp consomme
- Enough water to cook rice
Coating
- Enough all-purpose flour
- 🥚 1 egg, beaten
- 1 cup breadcrumbs
PASSI
Cut 1/2 of the king oyster mushroom into rough pieces. Slice the remaining mushroom into thin strips. Mince the onion and carrot.
Prepare the pilaf by adding rice, scallop can juice, water, salt, and consomme into a rice cooker. Spread scallops, mushrooms, onion, and carrot on top and cook as usual.
Divide the pilaf into 10 portions and shape into balls using plastic wrap.
Coat each rice ball with flour, beaten egg, and breadcrumbs in sequence.
Heat salad oil to 180°C and fry the rice balls for about 3 minutes until golden brown.
Heat olive oil in a pan and sauté sliced mushrooms with garlic until browned. Season with salt and pepper.
Plate the rice croquettes and top with sautéed mushrooms.
