INGREDIENTI
Fish
- 🐟 1 piece salted salmon (100g)
Legumes
- 🌱 50g steamed soybeans
Dairy
- 50g sake lees

- 🥔 200g minced daikon
- 🥕 1/3 carrot minced
Condiments
- 🧂 1 tsp soy sauce
- 🧂 Pinch of salt
- 1/3 tsp dashi powder

- 💧 200cc water
- 1 piece fried tofu (20g)
PASSI
Peel and mince the daikon. Mince the carrot.
Pat the fried tofu with a paper towel to remove excess oil and cut into 1cm cubes.
Remove bones from the salted salmon and cut into 1cm cubes.
In a pot, combine soybeans, daikon, carrot, water, and dashi powder. Heat over medium heat until boiling, then skim off any foam. Add salmon and tofu, mix, cover, and simmer over low heat for 7 minutes.
In a bowl, mix sake lees with one ladle of broth from the pot, then return the mixture to the pot. Simmer over low heat for 3 minutes until the liquid reduces. Add soy sauce and salt, mix well.
