- 🍝 100g penne

- 🦐 100g peeled shrimp

- 🥦 125g broccoli, cut into small florets

Pasta Water
- 2 tbsp pasta cooking water
Okara White Sauce
- 80g fresh okara
- 🧀 1 tbsp grated Parmesan cheese
- 🧂 1/3 tsp salt
- 🧂 A pinch of pepper
- 1/2 tsp consomme powder
- 🥛 200ml milk
PASSI
Cut the broccoli into small florets and peel the thick skin of the stems, slicing them into 5mm pieces.
Pat the peeled shrimp dry with a paper towel.
Boil a large pot of water, add salt (not listed in ingredients), and cook the penne 1 minute less than the package instructions. Reserve 2 tbsp of pasta water and drain.
Heat butter in a frying pan over medium heat. Once melted, add broccoli and shrimp, sautéing for about 1 minute until the broccoli turns vibrant green.
Add the okara white sauce ingredients (fresh okara, Parmesan cheese, salt, pepper, consomme, and milk) along with the reserved pasta water. Stir well and bring to a boil.
Add the cooked penne to the pan and mix quickly to coat evenly with the sauce.
