INGREDIENTI
Vegetables
- 🥔 4 medium potatoes (500g)
- 1 piece ginger, minced
Meat
- 200g ground pork
Seasonings
- 2 tbsp sake
- 🍬 2 tbsp sugar
- 2 tbsp soy sauce
Garnish
- Mitsuba, as needed
Broth
- 4g dashi powder
- 💧 200ml water
Thickener
- 1 tbsp potato starch
- 💧 2 tbsp water
PASSI
Mince the ginger.
Peel and cut the potatoes into bite-sized pieces. Soak them in water and drain.
In a pot, combine ginger, ground pork, sake, sugar, and soy sauce. Heat over medium heat and stir until the pork changes color.
Add the potatoes and stir to coat them with the pork fat. Then add the broth (dashi powder and water). Bring to a boil, skim off any foam, cover with a drop lid, and simmer over low-medium heat for 15 minutes until the potatoes are tender.
Add the potato starch mixture to thicken the sauce.
Serve in a bowl and garnish with mitsuba.
