INGREDIENTI
Main Ingredients
- 500g smoked duck
- 🥔 1 potato, sliced
- 🍄 3 shiitake mushrooms, sliced
- 🥕 Some carrot, sliced
- 🧅 1/2 onion, sliced
- 🌱 1 green onion, sliced
- 1 tbsp sesame seeds
Seasoning
- 2.5 tbsp gochujang
- 2 tbsp chili powder
- 2 tbsp soy sauce
- 1.5 tbsp oligosaccharide
- 1.5 tbsp cooking wine
- 2 tbsp plum extract
- 1 tbsp minced garlic
- 1/3 tbsp minced ginger
Chive Salad
- 130g chives, cut into 5cm pieces
- 🧅 1/4 onion, thinly sliced
- 2 tbsp soy sauce
- 1.5 tbsp vinegar
- 2 tbsp plum extract
- 1 tbsp sesame oil
- 1 tbsp ground sesame seeds
PASSI
Mix all the seasoning ingredients in a large bowl.
Add the smoked duck to the bowl and marinate for at least 30 minutes.
Slice the potato into 0.5cm thick pieces.
Slice the carrot and shiitake mushrooms thinly.
Cut the onion into 1cm wide strips.
Slice the green onion diagonally into large pieces.
Mix the marinated duck with the potato, carrot, and mushrooms in the bowl.
Stir-fry the mixture in a non-oiled pan over medium-low heat until the potatoes are almost cooked.
Add the onion and green onion, and stir-fry over medium heat for 2 minutes.
For the chive salad, cut the chives into 5cm pieces and thinly slice the onion.
Mix soy sauce, vinegar, plum extract, and sesame oil, then toss with the chives and onion.
Sprinkle ground sesame seeds over the salad and mix lightly.
Plate the chive salad and top with the stir-fried smoked duck. Sprinkle sesame seeds to finish.
