INGREDIENTI
Main Ingredients
- 🍗 150g chicken thigh
- 🥕 50g carrot
- 120g daikon
- 100g enoki mushroom
- 1 piece ginger
- 2 tbsp white sesame seeds
- Chopped green onion as needed
Suiton Dough
- 80g all-purpose flour
- 💧 50cc water
- 🧂 Pinch of salt
Broth
- 💧 400cc water
- 200cc unsweetened soy milk
- 1 tbsp sake
- 1/3 tsp chicken stock powder
- 2.5 tbsp miso
PASSI
Cut daikon and carrot into thin slices. Trim enoki mushrooms and cut into thirds. Slice ginger into thin strips.
Cut chicken thigh into bite-sized pieces.
Mix suiton dough ingredients in a bowl until smooth.
In a pot, bring water, sake, and chicken to a boil over medium heat. Skim off any foam.
Add chicken stock powder, ginger, daikon, and carrot. Cover and simmer on low heat for 10 minutes.
Scoop suiton dough into bite-sized pieces and add to the pot along with enoki mushrooms. Cover and cook for 5 minutes.
Reduce heat and dissolve miso into the broth. Add soy milk and warm gently over low heat.
Serve in bowls, garnish with green onion and sprinkle white sesame seeds.
