INGREDIENTI
Meat
- 16 slices thinly sliced pork belly
Vegetables
- 100g spring chrysanthemum, chopped
- 🍄 200g enoki mushrooms, trimmed and halved
Seasoning
- 🧂 A pinch of salt and pepper
- 1 tbsp potato starch
- 1 tbsp salad oil
Sauce
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 🧂 2 tbsp soy sauce
PASSI
Cut spring chrysanthemum into 5cm pieces. Trim enoki mushrooms, halve them, and separate.
Lay two slices of pork belly slightly overlapping vertically, season with salt and pepper. Place 1/8 of spring chrysanthemum and enoki mushrooms at the bottom edge and roll tightly. Repeat to make 8 rolls. Coat rolls evenly with potato starch.
Heat salad oil in a frying pan over medium heat. Place rolls seam-side down and cook until browned. Flip and add sake, mirin, sugar, and soy sauce. Bring to a boil, cover, and simmer on low heat for 3 minutes.
Uncover the pan and cook over medium heat for 1 minute, rolling the rolls to coat them evenly in the sauce.
