INGREDIENTI
Seafood
- 🦑 200g squid
Meat
- 🍗 100g ground chicken
Dairy / Tofu
- 100g firm tofu
Vegetables
- 🧅 2 stalks green onion
Oil
- 1 tbsp salad oil
Seasoning
- 1 tsp grated ginger
- 🧂 1/4 tsp salt
- Pinch of pepper
- 2 tbsp potato starch
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 1/2 tbsp soy sauce
- 1/3 tsp dashi powder
- 💧 100ml water
Thickener
- 1/2 tbsp potato starch
- 💧 1/2 tbsp water
PASSI
Wrap firm tofu in kitchen paper, microwave at 600W for 2 minutes, let cool, and drain excess water.
Prepare the squid by removing the guts, cartilage, and cutting into small pieces. Wash thoroughly.
Chop green onions finely.
In a bowl, mix squid, ground chicken, tofu, and seasonings until sticky. Add green onions and mix well. Shape into two oval patties.
Heat salad oil in a pan, cook patties on medium heat until browned. Flip, cover, and cook on low heat for 7–8 minutes.
Wipe the pan clean, add sauce ingredients, bring to a boil, then thicken with water-starch mixture.
Plate the patties and pour the sauce over them.
