INGREDIENTI
Main Ingredients
- 🐟 2 slices (350g) flounder
- 🍚 3 cups washed rice
- 1 piece sliced ginger
- 2 tsp white sesame seeds
- 2 tsp sesame oil
For Flounder Preparation
- 3 tbsp sake
- 🧂 Pinch of salt
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1 tsp salt
- 🧂 3 tbsp soy sauce
- 550ml dashi stock
Toppings
- 1 piece julienned ginger
- 2 myoga thinly sliced
- 🧅 3 stalks chopped green onion
- 3 leaves julienned shiso
PASSI
Sprinkle the flounder with sake and salt from the preparation ingredients. Let it sit for 30 minutes, then pat dry with a paper towel.
Soak the washed rice in water for 30 minutes, then drain well.
In a clay pot, add the rice and seasoning ingredients. Mix well and flatten the rice. Place the flounder and sliced ginger on top.
Cover the pot and heat on medium until boiling. Cook for 2 minutes, then reduce to low heat and cook for 12 minutes. Turn off the heat and let it steam for 10 minutes with the lid on.
Remove the lid, add the toppings, sprinkle with white sesame seeds, and drizzle with sesame oil before serving.
