INGREDIENTI
Wrapper
- 6 spring roll wrappers
Fish
- 200g swordfish fillets
Herbs
- 3 shiso leaves
Seasoning
- 🧂 Pinch of salt and pepper
Oil
- Enough salad oil for frying
Miso Mayo
- 1 tbsp miso
- 1 tbsp mayonnaise
Flour Mixture
- 1/2 tbsp all-purpose flour
- 💧 1/2 tbsp water
PASSI
Mix miso and mayonnaise in a bowl to create the miso mayo mixture.
Cut the stems off the shiso leaves and slice them in half lengthwise.
Pat the swordfish fillets dry with paper towels, cut them into thirds, and season with salt and pepper.
Place a spring roll wrapper with a corner facing down. Add a shiso leaf, a portion of miso mayo, and a piece of swordfish. Roll tightly and seal the edge with the flour-water mixture. Repeat for all wrappers.
Heat salad oil in a frying pan to 160°C (320°F). Fry the rolls for 3–4 minutes on each side until golden brown.
