INGREDIENTI
Meat
- 500g pork shoulder block
Vegetables
- 1/2 stalk green onion (50g)
- 1 slice ginger
- 🧄 1 clove garlic
- 1 chili pepper
Oil
- 1/2 tbsp salad oil
Liquid
- 400cc water
Seasonings
- 3 tbsp sake
- 🍬 3 tbsp sugar
- 2 tbsp soy sauce
- 3 tbsp miso
PASSI
Cut the green onion into 4cm lengths, remove the core, and slice thinly. Soak in water for 5 minutes and drain to make shredded green onion.
Slice the ginger thinly. Halve the garlic lengthwise, remove the core, and crush with the flat side of a knife. Remove the stem and seeds from the chili pepper using kitchen scissors.
Heat salad oil in a pot over medium heat. Add the pork and sear on all sides until browned. Turn off the heat and wipe off excess fat with paper towels.
Add water, seasonings (sake, sugar, soy sauce, miso), ginger, garlic, and chili pepper to the pot. Mix lightly and heat over medium heat. Once boiling, reduce to low heat, cover, and simmer for 30-40 minutes. Turn the pork occasionally and let it cool slightly.
Take 50cc of the cooking liquid and transfer to a small pot. Simmer over medium heat for about 5 minutes to reduce.
Slice the pork into serving pieces and plate. Top with shredded green onion and drizzle with the reduced sauce.
