    • 🧂 Pinch of salt

    • As needed grated daikon

Mix sake, soy sauce, mirin, and sugar in a microwave-safe container. Heat uncovered at 600W for 30 seconds until sugar dissolves.

Cut the grilled eel in half lengthwise. Place on foil-lined toaster tray, coat with half the sauce, and toast for 1–2 minutes. Flip, coat with remaining sauce, and toast for another 1–2 minutes.

Mix water and dashi powder in a microwave-safe container. Heat uncovered at 600W for 30 seconds, then stir. Beat eggs in a bowl, add dashi mixture and remaining egg mixture ingredients, and combine.

Heat a tamagoyaki pan with a thin layer of salad oil over medium-low heat. Pour 1/4 of the egg mixture into the pan.

When the egg starts to set, place shiso leaves across the surface and eel at one end. Fold the egg from the eel side towards the other end.

Repeat the process, adding oil and 1/4 of the egg mixture each time, folding and rolling until all egg mixture is used.

Shape the rolled omelette with a sushi mat, let cool slightly, and slice into portions. Serve with shiso leaves and grated daikon as garnish.
