INGREDIENTI
Rice
- 🍚 2 bowls (300g) cooked white rice
Fish
- 🐟 2 slices (90g) grilled unagi
Vegetables
- 🥒 1/2 cucumber, julienned
- 5 shiso leaves, julienned
- 1 myoga, thinly sliced
Egg
- 🥚 1 egg
Seasoning
- 🧂 Pinch of salt
- 1 tsp mirin
- 2 tbsp toasted white sesame seeds
Sushi Seasoning
- 1 tsp concentrated soy sauce
- 2 tbsp vinegar
- 🍬 2 tsp sugar
- 🧂 1/3 tsp salt
PASSI
Cut the unagi into halves, then slice into 1cm wide pieces.
Slice the myoga thinly, julienne the cucumber, and cut the shiso leaves into thin strips.
Mix the sushi seasoning ingredients in a bowl. Add the cooked white rice and mix gently, then fold in the toasted sesame seeds.
In a microwave-safe container, combine the egg, salt, and mirin. Cover loosely with plastic wrap and microwave at 600W for 40 seconds. Stir quickly to create scrambled egg crumbles.
Plate the seasoned rice, then layer cucumber, scrambled egg, myoga, unagi, and shiso leaves in order.
