Seafood
- 250g clams (purged)
Meat
- 100g sliced pork
Tofu
- 1 block (180g) silken tofu
Vegetables
- 2 shiitake mushrooms, sliced
- 1/2 stalk green onion, sliced
Oil
- 1 tbsp sesame oil
Seasoning
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
- 2 tsp chicken stock powder
- 300ml water
Thickener
- 1 tbsp cornstarch
- 1 tbsp water
Finish
- 1 tsp sesame oil
- 2 tbsp vinegar
- chili oil to taste
- chopped green onion to taste
- white sesame seeds to taste

Slice the shiitake mushrooms and green onion thinly.
Cut the silken tofu into 2cm cubes and slice the pork into bite-sized pieces.
Heat sesame oil in a pot over medium heat and sauté the pork until its color changes.
Add shiitake mushrooms and green onion, stirring until coated with oil.
Add the seasoning ingredients (sake, sugar, soy sauce, chicken stock, and water), cover, and simmer for 5 minutes.
Add clams and tofu, gently stirring until the clams open. Mix in the cornstarch slurry and cook until thickened.
Add sesame oil and vinegar, mixing briefly. Serve in bowls, garnish with chili oil, chopped green onion, and sesame seeds.
