- 🦐 6 frozen shrimp
Vegetables
- 🧄 1 clove garlic, minced
- 🥑 1/2 avocado, diced
Protein
- 30g tofu, drained and diced
Seasoning
- 🧂 1 pinch salt and pepper for shrimp
- 🧂 Salt and pepper to taste for garnish

- 1.5 tbsp olive oil
Pasta
- 100g pasta
- 🥚 1 egg white
- 🧀 2/3 cup grated cheese
- 🍅 1.5 tbsp tomato paste
- Parsley to taste

Drain tofu and dice it into cubes. Dice avocado and mince garlic.
Heat olive oil in a pan and sauté garlic until fragrant. Add shrimp and cook lightly, then remove shrimp.
Mix the remaining oil in the pan with cooked pasta.
In a bowl, combine pasta with egg white, grated cheese, tomato paste, and parsley. Mix well.
Grease a muffin tin with olive oil. Shape pasta into nests with a hollow center. Fill the center with avocado, tofu, and shrimp. Season with salt and pepper. Bake at 190°C (375°F) for 20 minutes.
