- 1/2 bunch garlic chives
- 1/2 bag bean sprouts

- 1 tbsp salad oil
- 1 tbsp mayonnaise
- 1/2 tbsp soy sauce
- 🧂 Salt and pepper to taste

Cut bacon and garlic chives into bite-sized pieces. Crack eggs into a bowl and mix well.
Heat half of the salad oil (1/2 tbsp) in a frying pan over medium heat. Add eggs and stir until semi-cooked, then remove from the pan.
In the same pan, add the remaining salad oil (1/2 tbsp) and heat. Add bacon and cook until browned, then add bean sprouts and stir-fry for 1 minute. Add garlic chives and stir briefly.
Add mayonnaise, soy sauce, and salt and pepper. Stir to combine.
Return the eggs to the pan and mix gently, breaking them into smaller pieces. Serve on a plate and optionally sprinkle with pepper.
