재료
Seafood
- 🦐 4 shrimp, peeled and deveined
Vegetables
- 🍠 2 slices of sweet potato, 7mm thick
- 🍆 1 eggplant, sliced and prepared
- 4 shishito peppers
- 2 shiso leaves
Batter
- 🥚 1 egg
- 150ml cold water
- 🌾 100g all-purpose flour
Other
- 🌾 1 tbsp all-purpose flour
- Enough vegetable oil for frying

Keep batter ingredients chilled in the refrigerator until ready to use.
Soak sweet potato slices in water for 5 minutes, then pat dry with paper towels.
Prepare shishito peppers by trimming the stem and making a small slit.
Dust eggplant slices with 1 tbsp flour after preparing them.
Prepare shrimp by removing shells, deveining, and making small cuts to straighten them.
Mix egg and cold water in a bowl, then add 100g flour and lightly mix with chopsticks.
Heat vegetable oil to 170°C in a deep pan.
Dip sweet potato slices in batter and fry for 1 minute, then flip and fry for another 2 minutes.
Dip shishito peppers in batter and fry for 1 minute, then flip and fry for 30 seconds.
Dip shiso leaves in batter and fry for 1 minute with the batter side down.
Dip eggplant slices in batter and fry for 1 minute, then flip and fry for another 2 minutes.
Dip shrimp in batter and fry until golden, flipping after 2 minutes.
