Rice
- 🍚 300g cooked rice
- 20g shibazuke (pickled vegetables)
Sushi Vinegar
- 🍬 1/2 tbsp sugar
- 🧂 1/3 tsp salt
- 2 tbsp vinegar
Beef Shigure
- 🥩 150g sliced beef
- 1 piece ginger, julienned
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp concentrated soy sauce
Scrambled Egg
- 🥚 1 egg
- 🍬 1 tsp sugar
- 🧂 1 pinch salt
- 1 tsp salad oil
Garnish
- Kaiware sprouts, as needed

Chop the shibazuke and julienne the ginger.
Mix the sushi vinegar ingredients (sugar, salt, vinegar) in a bowl. Combine cooked rice, chopped shibazuke, and sushi vinegar in another bowl, mixing gently. Let cool.
Heat a pot with all beef shigure ingredients except the beef. Once boiling, add beef and cook over medium heat for 3 minutes until the sauce reduces. Let cool to absorb flavors.
Beat the egg with sugar and salt. Heat a pan with salad oil, pour in the egg mixture, and stir continuously to create scrambled egg crumbles.
Plate the rice mixture, top with scrambled eggs, beef shigure, and garnish with kaiware sprouts.
