Main Ingredients
- 200g ground chicken
- 300g firm tofu
- 100g cabbage, chopped
- 10cm minced green onion
- 🥚 1 egg, separated
- 1/2 tbsp salad oil
- white sesame seeds, as needed
Meat Mixture Seasoning
- 2 tbsp potato starch
- 🧂 1/3 tsp salt
- a pinch of pepper
- 1/3 tsp grated ginger
Sweet Soy Sauce
- 1 tbsp sake
- 2 tbsp mirin
- 1 tsp sugar
- 2 tbsp soy sauce

Chop the cabbage into bite-sized pieces and mince the green onion.
Separate the egg yolk and egg white.
In a bowl, mix ground chicken, firm tofu, minced green onion, egg white, and the meat mixture seasoning until sticky.
Heat a frying pan with salad oil and spread 1/3 of the meat mixture evenly.
Layer cabbage on top, then repeat with another 1/3 of the meat mixture, more cabbage, and the remaining meat mixture.
Cook over medium heat until browned, then cover and cook on low-medium heat for 10 minutes.
Flip the dish and cook on low heat for another 5-6 minutes until fully cooked.
In the same pan, heat the sweet soy sauce ingredients until glossy.
Plate the cooked tsukune, drizzle with sweet soy sauce, top with egg yolk, and sprinkle sesame seeds.
