- 🐟 70g smoked salmon (8 slices)
- 🥔 2 potatoes
- 🧅 1/4 onion
- 🥒 1 cucumber
- Baby leaf, as needed
- Olive oil, as needed
Seasonings
- 2 tbsp mayonnaise
- 1 tbsp vinegar
- 🧂 1 pinch salt
- Black pepper, as needed

Finely chop the onion, sprinkle with a pinch of salt, massage, let sit for 5 minutes, and squeeze out excess water.
Peel the cucumber into thin slices using a peeler. Chop the ends finely. Sprinkle the thin slices with 1/4 tsp salt, let sit for 5 minutes, rinse, and pat dry.
Cut the potatoes into bite-sized pieces, soak in water briefly, drain, and microwave in a heatproof container for 4–5 minutes at 600W.
Mash the warm potatoes, let cool slightly, then mix with the seasonings (mayonnaise, vinegar, salt, black pepper). Add the onion and chopped cucumber and mix well.
Layer 2–3 cucumber slices and roll them to resemble flowers. Repeat to make 4 cucumber flowers. Roll 2 slices of smoked salmon together to form flowers, making 4 salmon flowers.
Plate the potato salad, top with baby leaves, and decorate with the cucumber and salmon flowers. Drizzle with olive oil if desired.
