Eggs
- 🥚 4 eggs, beaten
Meat
- 🥓 4 slices of bacon
Vegetables
- 🥦 125g broccoli, cut into small florets
- 🍅 4 cherry tomatoes, quartered
Dairy
- 🧈 20g salted butter
- 🧀 1 tbsp grated cheese
Seasonings
- 🧂 1/4 tsp salt
- A pinch of black pepper
- 🍅 2 tbsp ketchup

Cut broccoli into small florets. Place in a microwave-safe container with water, cover loosely with plastic wrap, and microwave at 600W for 1.5 minutes. Drain and let cool. Quarter the cherry tomatoes.
Cut bacon into 1cm-wide strips.
In a bowl, beat the eggs and mix in salt, pepper, and grated cheese. Add broccoli and cherry tomatoes to the egg mixture.
Heat a small frying pan over medium heat and melt the butter. Add bacon and sauté briefly. Pour in the egg mixture, stir lightly, cover, and cook for 3–4 minutes until the surface sets. Flip and cook for another 2 minutes.
Cut the omelette into serving-sized pieces, plate, and serve with ketchup on the side.
