- 1 teaspoon oregano

- 1 large jalapeño pepper, halved and seeded
- 1 whole canned chipotle pepper in adobo sauce (optional)

Combine chicken, 1 onion, cilantro stems, bay leaves, oregano, peppercorns, dried chili pods, and 3 quarts water in a large pot. Simmer for 1 hour.
Preheat oven to 350°F (180°C). Prepare tortilla strips: cut tortillas, season with oil and salt, and bake until crispy for 30 minutes.
Remove chicken from broth. Shred meat and refrigerate. Simmer chicken bones and skin in the broth for 4 hours.
Char onions, tomatoes, red pepper, and jalapeño under a broiler. Blend with garlic, chipotle, and 1 cup water to make salsa.
Add salsa to broth. Simmer for another 2 hours. Strain broth, add shredded chicken, and season with cumin and lime juice.
Serve with tortilla strips and optional garnishes like sour cream, avocado, cheese, cilantro, or cayenne pepper.
