    • 1 tbsp mirin
    • 🍬 1 tsp sugar
    • 1 tbsp miso
    • 1/2 tsp grated ginger

Cut off the eggplant stems. Slice each eggplant in half lengthwise, then cut into 1cm thick slices. Slice the king oyster mushroom in half lengthwise, then cut into 5mm thick slices.

Cut the chicken breast into 2cm cubes.

Mix all the seasoning ingredients (sake, mirin, sugar, miso, and grated ginger) in a bowl.

Heat salad oil in a frying pan over medium heat. Add the chicken and stir-fry until the color changes. Add eggplant and king oyster mushroom, and stir-fry until softened.
