- 🍗 1 chicken breast (250g), skinless
- 🥔 2 potatoes (300g), thinly sliced
- 🧀 100g shredded pizza cheese
- 🧂 Pinch of salt and pepper
- Flour for dusting
- Olive oil for greasing
- 🌿 Chopped parsley for garnish
Tomato Sauce
- 🍅 1 can (400g) diced tomatoes
- 🧅 1/4 onion, minced
- 1 tsp consomme powder
- 🧂 1/3 tsp salt
- 🧂 Pinch of pepper
- 🧄 1/2 tsp grated garlic
- 1 tbsp olive oil

Thinly slice the potatoes and soak them in water, then drain. Mince the onion.
Combine all tomato sauce ingredients in a bowl, cover with plastic wrap, and microwave at 600W for 2 minutes. Stir, then microwave uncovered for 3 minutes.
Slice the chicken breast diagonally, season with salt and pepper, and dust with flour.
Grease a loaf pan with olive oil. Layer potatoes, tomato sauce, chicken, and cheese. Repeat the layering process.
Cover with aluminum foil and bake in a preheated oven at 200°C for 20 minutes. Remove the foil and bake for another 10 minutes.
Cut into 3-4 portions, plate, and garnish with parsley.
