Main Ingredients
- 30g vermicelli
- 100g chicken mince
- 🧅 1/4 red onion
- 50g cilantro
- 🍅 4 cherry tomatoes
- 1/2 tbsp salad oil
Seasoning for Mince
- 🧂 1/4 tsp salt
- 1/2 tsp chicken stock powder
- 50cc water
Sauce Ingredients
- 🍬 1 tsp sugar
- 1/2 tbsp fish sauce
- 🍋 1/2 tbsp lemon juice
- 🧄 1/3 tsp garlic paste
- 1/2 tsp ginger paste
- 1/2 tsp chili powder

Place vermicelli in a microwave-safe container, add enough water to cover, and microwave at 600W for 7 minutes. Rinse with cold water, drain, and cut into manageable lengths.
Slice the red onion thinly. Cut cilantro into 4cm pieces, reserving 1/5 for garnish.
Heat salad oil in a pan over medium heat, add chicken mince, and stir-fry until crumbly. Add seasoning ingredients and simmer until liquid evaporates.
Mix sauce ingredients in a bowl, add vermicelli, and toss. Add cooked chicken mince, red onion, and 4/5 of the cilantro, mixing gently.
Plate the salad, garnish with reserved cilantro, and serve with cherry tomatoes.
