- 125g pea shoots
- 20g dried kiriboshi daikon
Seasoning
- 1 tbsp sake
- 1 tbsp sesame oil
- 2 tbsp ponzu sauce
- 🌰 1 tbsp ground sesame
- Pinch of black pepper

Trim the roots of pea shoots and cut them into thirds. Rinse kiriboshi daikon lightly with water, squeeze out excess water, and soak in a bowl with water for 10 minutes. Drain and cut into bite-sized pieces.
Place chicken breast in a microwave-safe container, sprinkle with sake, cover with plastic wrap, and microwave at 600W for 2 minutes. Let cool slightly, shred into bite-sized pieces, and return to the container.
In a bowl, mix sesame oil, ponzu sauce, ground sesame, and black pepper. Add the chicken along with its cooking juices, then add pea shoots and kiriboshi daikon. Toss everything together.
