Main
- 180g dried soba noodles
- 250g chicken thigh
- 1/2 stalk green onion
- 🧂 1/2 tsp salt
- 🍋 1/2 lemon, sliced
Soup Base
- 700ml water
- 1/2 tsp chicken stock powder
- 1/2 tbsp soy sauce

Slice the green onion diagonally and the lemon thinly. Cut the chicken into bite-sized pieces.
Place the chicken in a bowl, add salt, and massage it into the meat.
Boil water in a pot, add the soba noodles, and cook according to package instructions. Drain and place in serving bowls.
Clean the pot, dry it, and add the soup base ingredients. Heat over medium heat until boiling, then add the chicken and simmer on low heat for 10 minutes.
Add the green onion to the pot and cook for 1 minute over medium heat. Pour the soup over the noodles and garnish with lemon slices.
