Chicken
- 🍗 150g chicken tenderloin
- 🧂 Pinch of salt and pepper
Wasabi & Seaweed Paste
- 1/2 tsp wasabi
- 2 tsp seaweed paste
Mentaiko Mayo & Shiso
- 25g mentaiko
- 1/2 tbsp mayonnaise
- 1 shiso leaf
Sweet Miso & Cream Cheese
- 1 tsp mirin
- 1/2 tbsp miso
- 18g cream cheese

Remove the tendons from the chicken tenderloins and slice them into thirds using a slanted knife technique.
Finely chop the shiso leaf, crumble the cream cheese by hand, and extract the contents of the mentaiko.
Mix the wasabi and seaweed paste in a bowl.
Mix the mentaiko, mayonnaise, and chopped shiso in a bowl.
Mix the mirin, miso, and cream cheese in a bowl.
Place the chicken tenderloins on a baking tray, season both sides with salt and pepper, and spread each of the three sauces evenly over the chicken pieces. Bake in a toaster oven for 8–10 minutes until cooked through.
