- 🍗 1 piece (250g) chicken thigh
- 🧂 Pinch of salt and pepper
- 2 tbsp potato starch
- 1 tbsp salad oil
Tartar Sauce
- 🥚 1 boiled egg
- 🧅 1/4 onion, minced
- 🥒 1/4 cucumber, minced
- 3 tbsp mayonnaise
- 🍋 1/2 tsp lemon juice
- 1 tsp curry powder
- 1/2 tsp grain mustard
- 🧂 Pinch of salt and pepper
Seasoning
- 2 tsp sugar
- 2 tsp vinegar
- 1 tbsp soy sauce

Mince the onion, cucumber, and boiled egg.
Soak the onion in water for 5 minutes, then pat dry with a paper towel along with the cucumber.
Mix the onion, cucumber, boiled egg, and tartar sauce ingredients in a bowl.
Cut the chicken thigh in half, score shallow cuts vertically, season both sides with salt and pepper, and coat with potato starch.
Heat salad oil in a pan, cook the chicken skin-side down on medium heat, flip and cook both sides, then remove excess oil with a paper towel.
Add the seasoning ingredients to the pan, simmer to coat the chicken, slice into bite-sized pieces, plate, and top with tartar sauce.
