- 🍗 150g chicken thigh
- 2 shiso leaves
- 100g bean sprouts
- 30g ume plum paste
Seasoning
- 1 tbsp sake
- 1/2 tbsp soy sauce

Pat dry the chicken thigh with a paper towel. Place the chicken in a bowl, add sake and soy sauce, and massage to marinate for 2 minutes.
Cut off the stems of the shiso leaves and slice them thinly. Remove the seeds from the ume plums and mash them into a paste.
In a microwave-safe container, layer the bean sprouts, marinated chicken, and ume paste. Cover loosely with plastic wrap and microwave at 600W for 4–5 minutes until cooked through.
Once the chicken has cooled slightly, cut it into bite-sized pieces. Serve on a plate and garnish with sliced shiso leaves.
