- 🐟 2 fillets cod
Vegetables
- 🍄 1 pack enoki mushrooms
- 🧅 Chopped green onion, as needed
Seasonings
- 1 tbsp sake
- 🧂 1/3 tsp salt
- 1/2 tsp chicken stock powder
- 1 tsp sesame oil
- 1 tsp grated ginger
- 💧 200 ml water
Thickener
- 2 tsp cornstarch
- 💧 2 tsp water

Trim the root of the enoki mushrooms and cut them into 3 cm pieces.
Place the cod fillets in a microwave-safe dish, sprinkle with sake, cover loosely with plastic wrap, and microwave at 600W for about 3 minutes.
In a pot, combine the seasoning ingredients (salt, chicken stock powder, sesame oil, ginger paste, and water) and heat until boiling. Add the enoki mushrooms and simmer for about 2 minutes.
Add the cornstarch slurry (cornstarch mixed with water) to the pot and stir until the sauce thickens. Serve the cod on a plate, pour the mushroom sauce over it, and garnish with chopped green onions.
