Vegetable
- 240g daikon radish, sliced
- 🍚 10g rice
- 💧 200cc water
- 1 tbsp white dashi
☆ Pork Miso Sauce
- 100g ground pork
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1/2 tbsp sugar
- 1 tbsp red miso
- 1 tsp grated ginger
Garnish
- A pinch of yuzu peel

Cut the daikon radish into 2cm thick slices, peel thickly, and make a cross incision on one side. Trim the edges.
Place the daikon, enough water to cover, and rice into a pot. Heat over medium heat and boil for about 10 minutes until the daikon softens. Remove and rinse under running water.
Add the daikon, white dashi, and water to the pot. Heat until boiling, then simmer on low heat for about 10 minutes.
Mix the pork miso sauce ingredients (☆) in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 1 minute 30 seconds. Stir, cover again, and microwave for another minute. Let cool slightly.
Plate the daikon, top with pork miso sauce, and garnish with yuzu peel as desired.
