Main Ingredients
- 1 piece (250g) fried tofu
- 🍆 3 eggplants (240g)
- 1 piece ginger
Cooking Oil
- 1 tbsp salad oil
Seasoning
- 1 tbsp sake
- 2 tbsp mirin
- 2 tbsp miso

Pat the fried tofu with a paper towel to remove excess oil and tear it into bite-sized pieces.
Cut off the stems of the eggplants and slice them into bite-sized pieces using a rolling cut method. Slice the ginger into thin strips.
Mix the seasoning ingredients (sake, mirin, miso) in a bowl.
Heat salad oil in a frying pan over medium heat and stir-fry the eggplants until tender.
Add the fried tofu and ginger to the pan and stir-fry for 1–2 minutes. Add the seasoning mixture and stir to combine.
