Remove the tendons from the chicken tenders and slice them thinly at an angle. Cut the enoki mushrooms into 4cm pieces and slice the processed cheese into 1cm sticks.
Mix the chicken, enoki mushrooms, and seasonings (sake, salt, sesame oil) in a bowl.
Place a shiso leaf, the mixed filling, and a cheese stick in the center of a spring roll wrapper. Roll tightly, sealing the end with the flour-water mixture.
Heat salad oil in a pan to 170°C. Fry the spring rolls on low heat, turning occasionally, until golden brown and cooked through.
