Vegetables
- 🍄 1 pack enoki mushrooms
- 🥒 1 cucumber, julienned
Condiments
- 2 umeboshi, pitted and mashed
- 1 pack katsuobushi
Seasonings
- 1 tsp sake
- 🍬 1 tsp sugar
- 🧂 1 tbsp soy sauce

Trim the root of the enoki mushrooms and cut them into thirds.
Julienne the cucumber, sprinkle with a pinch of salt, then rinse and squeeze out excess water.
Pit the umeboshi and mash them into a paste.
In a microwave-safe container, combine enoki mushrooms and the ☆ seasonings. Cover loosely with plastic wrap and microwave at 600W for 2 minutes. Lightly drain any excess liquid.
In a bowl, mix the enoki mushrooms, cucumber, ume paste, and katsuobushi until well combined.
