- 🐟 2 fillets mackerel (170g)
Vegetables
- 🍅 12 cherry tomatoes
- 🧅 1/2 onion (100g), thinly sliced
- 🥔 2 small potatoes (240g), peeled and chopped
- 🌿 4g minced parsley
Seasoning
- 50cc olive oil
- 🧂 Pinch of salt and pepper
- 3 tbsp breadcrumbs
- 🍋 2 lemon wedges
Marinade
- 50cc white wine
- 🧄 1 clove garlic, thinly sliced
- 2 sprigs rosemary
- 🧂 Pinch of salt and pepper

Thinly slice the onion. Peel and chop the potatoes into bite-sized pieces, then soak in water and drain. Thinly slice the garlic and remove its core. Mince the parsley and halve the rosemary sprigs.
Pat the mackerel fillets dry with paper towels and cut into 4 equal pieces.
Place the mackerel and marinade ingredients (white wine, garlic, rosemary, salt, and pepper) into a resealable bag. Massage gently and refrigerate for 30 minutes.
In a heatproof dish, combine cherry tomatoes, onion, potatoes, olive oil, and a pinch of salt and pepper. Arrange the marinated mackerel skin-side up on top, then sprinkle breadcrumbs and parsley evenly.
Bake in a preheated oven at 230°C (450°F) for 15–20 minutes until golden brown.
Squeeze lemon over the dish before serving.
