- 🍄 6 shiitake mushrooms
- 🧅 1/3 stalk scallion, minced
Cooking Oil
- 1 tsp sesame oil for frying

- 1.5 tbsp ponzu sauce
- 1 tsp sesame oil
- Pinch of black pepper

Mince the scallion and separate the shiitake mushroom caps from the stems. Mince the stems.
Heat sesame oil in a pan over medium heat. Place the shiitake caps face down and cook until browned. Flip them over, push them to the side, and add the minced stems to the pan. Stir until coated with oil. Cover the pan and steam on low heat for 2 minutes.
In a bowl, mix the minced stems, scallion, ponzu sauce, and sesame oil to create the scallion ponzu sauce.
Arrange the shiitake caps on a plate with the underside facing up. Spoon the scallion ponzu sauce onto each cap and sprinkle with black pepper.
