Mashed Potatoes
- 🥔 3 medium potatoes (450g)
- 🐟 40g salmon flakes
- 🌽 40g canned corn
- 🧈 20g salted butter
- 🥛 4 tbsp milk
- 🧂 1/4 tsp salt
- Pinch of black pepper
Herb Breadcrumbs
- 🍞 30g breadcrumbs
- 🧀 1 tbsp grated cheese
- 🌿 1 tsp dried parsley
- 1 tbsp olive oil

Cut the potatoes into bite-sized pieces and soak them in water. Drain and place in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 5 minutes. Mash the potatoes while hot with butter.
Add milk to the mashed potatoes and mix until smooth. Stir in salmon flakes and corn. Season with salt and pepper to taste.
In a bowl, mix breadcrumbs, grated cheese, and parsley. Add olive oil and combine well.
Spread the mashed potato mixture evenly in a heatproof dish. Top with the herb breadcrumbs. Bake in a toaster oven for 2-3 minutes or until golden brown.
