Fish
- 🐟 4 fillets horse mackerel (140g)
Vegetables
- 🥔 2 potatoes (300g)
- 2 shiso leaves
Seasoning
- 🧂 Pinch of salt
- 2 tbsp all-purpose flour
- 1 tbsp salad oil
- 1 tbsp mayonnaise
- 1/2 tbsp miso
- 1/2 tbsp white sesame seeds
- 1/2 tsp grated Parmesan cheese

Cut potatoes into bite-sized pieces, soak in water, drain, and microwave in a heatproof container covered with plastic wrap for 6–7 minutes at 600W. Mash while hot and mix with the ☆ seasonings.
Trim the stems off the shiso leaves and cut them in half lengthwise.
Sprinkle horse mackerel fillets with salt, let sit for 10 minutes, then pat dry with paper towels and coat with flour.
Place the fillets skin-side down, add shiso leaves and 1/4 of the potato mixture, then roll tightly from the front.
Heat salad oil in a frying pan over medium heat, place rolls seam-side down, and cook for about 3 minutes, turning occasionally.
