Main Ingredients
- 🥓 2 slices bacon
- 4 leaves green curl lettuce
- 🧅 1/4 onion (50g), thinly sliced
- 🍅 6 cherry tomatoes, halved
- 🧀 1/2 tbsp grated cheese
Dressing
- 3 pitted black olives, chopped
- 1 anchovy, finely chopped
- 🧂 1/4 tsp salt
- Pinch of pepper
- 🍋 1/2 tbsp lemon juice
- 1 tbsp olive oil

Cut green curl lettuce into bite-sized pieces. Halve cherry tomatoes and thinly slice onion. Soak onion in water and massage 5 times to remove bitterness, then drain well. Arrange lettuce, tomatoes, and onion on a plate and chill in the refrigerator. Chop black olives and anchovy finely.
Cut bacon into 5mm strips. Place on a foil-lined toaster tray and bake for 5 minutes until crispy. Let cool.
Mix all dressing ingredients in a bowl.
Remove the plate from the refrigerator, sprinkle grated cheese, add crispy bacon, and drizzle dressing over the salad.
