Shrimp
- 🍤 4 shrimp, deveined and shelled
Meat
- 100g thinly sliced pork loin
Herbs
- 2 shiso leaves, halved
Seasoning
- 🧂 Pinch of salt and pepper
Breading
- 🌾 3 tbsp all-purpose flour
- 🥚 1 egg
- Breadcrumbs as needed
Oil
- Cooking oil as needed
Tartar Sauce
- 🥚 1 boiled egg
- 1 tbsp mayonnaise
- 1 tsp ponzu soy sauce
- 🧂 Pinch of salt and pepper

Remove the shells and devein the shrimp. Wash thoroughly.
Make shallow cuts on the belly side of the shrimp and stretch them out.
Cut the stems off the shiso leaves and halve them. Season the pork loin slices with salt and pepper.
Place a shiso leaf and shrimp on the pork slice and roll them up tightly.
Coat the rolls in flour, then dip in beaten egg, and finally cover with breadcrumbs.
Heat oil to 180°C and fry the rolls until golden brown. Plate them.
Mash the boiled egg in a bowl using a fork. Mix in mayonnaise, ponzu soy sauce, and salt and pepper. Serve with the fried shrimp.
