- 🦐 6 live kuruma prawns
Vegetables
- 🥗 50g shredded daikon
- 2 shiso leaves

- 🧂 soy sauce, as needed

Remove the kuruma prawns from the sawdust and rinse them under water to clean off the sawdust. Submerge them in ice water for about 5 minutes, placing a strainer on top to prevent them from jumping.
Hold the prawn by the base of its head and body. Insert your thumb at the base of the head and detach the head from the body.
Peel off the shell, leaving the tail and the first joint intact.
Make a shallow cut along the back of the prawn and remove the vein. Open the prawn along the cut (butterfly it).
Rinse the prawn in ice water and pat it dry with a kitchen towel.
Arrange the shredded daikon, shiso leaves, and prepared prawns on a plate.
