- 🐟 2 fillets mackerel
Vegetables
- 🧅 1/2 onion, sliced
- 🍅 4 cherry tomatoes, halved
Seasoning

- 20g curry roux, chopped

- 1 tbsp salad oil for mackerel
- 1/2 tbsp salad oil for onion

Slice the onion thinly and halve the cherry tomatoes. Chop the curry roux into small pieces.
Sprinkle salt on both sides of the mackerel fillets and let them sit for 5 minutes. Pat dry with a paper towel, score the skin, and season with pepper. Coat both sides with flour.
Heat a frying pan over medium heat, add salad oil and grated garlic, then place the mackerel fillets skin-side down. Cook until golden brown, flip, and cook the other side for 1 minute. Remove from the pan.
Wipe the pan clean, add salad oil, and heat over medium. Add the onion and sauté until softened. Pour in water, bring to a boil, and dissolve the curry roux. Return the mackerel to the pan, spoon the sauce over the fillets, and simmer for 2 minutes. Add cherry tomatoes and simmer for 1 more minute.
