Base
- 🍚 2 bowls cooked rice (400g)
Protein
- 🐟 200g albacore tuna sashimi
- 🥚 2 egg yolks
Vegetables
- 5 shiso leaves, sliced
Seasoning
- 1/2 tbsp sesame oil
- 1 tbsp sake
- 2 tbsp mirin
- 🧂 1 tsp sugar
- 1.5 tbsp soy sauce

Slice the shiso leaves thinly and set aside.
Heat sesame oil in a pan over medium heat and lightly sear the albacore tuna until its surface changes color. Remove and let cool.
In the same pan, add sake, mirin, sugar, and soy sauce. Heat over medium and stir until the sauce thickens slightly.
Cut the seared tuna into bite-sized pieces.
In a bowl, place half the rice, top with half the tuna, shiso leaves, and egg yolk. Drizzle with the sauce. Repeat for the second serving.
