Filling
- 1 (18 ounce) jar prepared mincemeat pie filling
- 🌰 1 ½ cups chopped walnuts
- 🟤 ½ cup packed brown sugar
- ¼ cup rum
- 🍋 1 tablespoon lemon juice
Crust
- 2 9-inch pie crusts

Combine mincemeat, walnuts, brown sugar, rum, and lemon juice in a bowl. Cover bowl with plastic wrap; refrigerate 8 hours to overnight.
Preheat the oven to 425°F (220°C) with a rack in the lowest position.
Remove filling from the refrigerator; bring to room temperature. Place 1 crust in the bottom of a 9-inch pie plate.
Stir mincemeat filling well and pour into the bottom crust. Top with remaining pie crust; crimp edges and cut vent slits in the top crust (or weave for a lattice top).
Bake in the preheated oven until golden brown, about 40 minutes.
