  • Rice

    • 🍚 400g cooked rice
    • 2 pieces mentaiko (80g)
    • 4 shiso leaves
    • 2 tsp potato starch
    • 1 tbsp sesame oil
    • 🧂 1 tbsp soy sauce
    • 1 sheet nori

Cut the stems off the shiso leaves and slice them thinly. Remove the thin skin from the mentaiko and set aside one piece for garnish.

Mix the rice with potato starch in a bowl. Divide into 8 portions, wrap each in plastic wrap, and shape into flat, round discs about 6–7 cm wide.

Spread 1/4 of the mentaiko on 4 rice discs. Place another rice disc on top of each and press firmly to seal.

Heat sesame oil in a frying pan over medium-low heat. Cook the rice balls until golden on both sides. Brush soy sauce on each side and cook until both sides are evenly browned.

Place each grilled rice ball on a piece of nori. Top with reserved mentaiko and sliced shiso leaves. Repeat for all rice balls.
