Cut off the stems of the shiso leaves and slice them thinly.
Make a slit in the mentaiko and extract the contents.
In a large bowl, mix the mentaiko, soy sauce, and mayonnaise.
Boil water in a pot, add salt (not listed in ingredients), and cook spaghetti according to package instructions. Reserve 2 tbsp of pasta water and drain the rest.
Add the spaghetti, reserved pasta water, and butter to the bowl with the sauce. Mix until the butter melts and everything is well combined.
