Wrapper
- 14 dumpling wrappers
Filling
- 150g ground pork
- 50g chives, chopped
- 30g cabbage, minced
- 1 shiitake mushroom, minced
Seasoning
- Sesame oil, as needed
- 1 tsp Chinese stock powder
- 1 tsp sake
- 1/2 tsp soy sauce
- 1 tsp chili oil
- Pinch of pepper
- 1.5 tbsp potato starch
Dipping Sauce
- 1.5 tbsp soy sauce
- 1.5 tbsp vinegar
- 1 tsp chili oil

Mix soy sauce, vinegar, and chili oil in a bowl to prepare the dipping sauce.
Chop chives into 5–6mm pieces, mince cabbage and shiitake mushroom, and place them in a bowl.
Add ground pork and seasonings (Chinese stock, sake, soy sauce, chili oil, pepper, and potato starch) to the bowl and mix until sticky.
Moisten the edges of dumpling wrappers with water. Place 1/14 of the filling in the center, fold and pleat the edges, leaving the top open. Repeat for all wrappers.
Heat sesame oil in a pan over medium heat. Place dumplings top-side down and cook until browned. Flip, add 60ml water, cover, and steam for 5 minutes until cooked through.
Serve the dumplings on a plate with the dipping sauce on the side.
